- 2 cups cooked white rice (cold)
- 3 tbsp sweet soy sauce (Kecap Manis)
- 2 cloves garlic, minced
- 3 shallots, sliced
- 2 eggs
- 2 tbsp vegetable oil
- 1 tsp chili paste (Sambal)
- Salt and pepper to taste
The Story of Nasi Goreng
Nasi Goreng is Indonesia’s beloved national dish, traditionally served as a breakfast to use up leftover rice from the night before. What makes it distinct from Chinese fried rice is the use of Kecap Manis, a thick, sweet soy sauce that caramelizes the rice and gives it a deep brown color.
It’s a versatile dish that can be found everywhere from street food carts (kaki lima) to high-end restaurants.
Instructions
Heat oil in a wok or large pan over high heat.
Add garlic and shallots. Stir-fry until fragrant (about 1 minute).
Push aromatics to the side, crack eggs into the pan and scramble.
Add the cold rice and stir well to break up clumps.
Add sweet soy sauce, chili paste, salt, and pepper. Stir-fry vigorously for 3-5 minutes until the rice is evenly coated and slightly caramelized.
Serve hot with cucumber slices and a fried egg on top.
